On the palate, this blend shows excellent and silky tannins that define its structure and vivacity.
PRODUCTION AND AGING
This wine is co-fermented in concrete vats with Malbec harvested in a ripe profile and Cabernet Franc in a fresh profile. Vinification is classic, with maceration for a total of 15 days, where alcoholic fermentation is carried out at 26 °C. The vat foot used is a Bayanus strain. Its fermentation is 100% malolactic and the wine obtained is 100% drop.
For the final cut, different lots are selected from among floral, fresh and ripe profiles, seeking the perfect balance between these three factors. It is aged 80% in concrete and 20% in second and third use French oak barrels for 8 to 9 months.
Once the mixture has been made, it remains in concrete vessels until the next bottling.
PAIRING AND SERVICE NOTES
Excellent with roasted leg of lamb with vegetables, lentil soup or a sweet chocolate volcano. We recommend serving it at 16°C.
