Reserva Chardonnay
An excellent, well-balanced Chardonnay with refreshing acidity and a fruity finish.
PRODUCTION AND AGING
Harvesting is mechanical and nocturnal to protect the quality of the fruit. It is gently pressed at low temperatures, separating the free-run juice, which is classically fermented in stainless steel tanks at 12-14°C for 20 days.
The vat foot used to carry out fermentation is a Bayanus type yeast especially for the Chardonnay grape variety, which favors the release of fruity and floral esters.
95% of this wine is aged on its fine lees for 4 months in stainless steel tanks and the remaining 5% is reserved in French oak.
PAIRING AND SERVICE NOTES
Excellent with ceviche, buttered rainbow trout and/or seafood cocktails. We recommend serving at 8°C.
