PRODUCTION AND AGING
Harvesting is done by hand.
Pinot Noir (80%) and Pinot Grigio (20%) are co-fermented; the grapes are harvested at the same time for both varietals and the vintage profile of both is floral-fruity.
Pressing is done by separating the must at low temperatures and low pressures (1.2 bar) and then this decanted ferments in stainless steel tanks at 12~14˚C, for 20 days.
The vat foot used is a Bayanus strain.
