An outstanding garnet red color, with spicy and menthol aromas, excellent balance between fresh black fruit and ripe red fruit.
Cabernet Sauvignon Reserva
In the mouth it is an unctuous and elegant Cabernet, with firm tannins that reinforce its structure.
PRODUCTION AND AGING
These grapes are harvested mechanically: 70% in fresh profile and 30% in ripe profile. Alcoholic fermentation is carried out at 24°C for freshly harvested grapes and at 27°C for ripe grapes for 7 to 10 days. It is a classic fermentation, with a 15-day maceration in small concrete vessels. The vat foot used is a Bayanus strain. Its fermentation is 100% malolactic and the wine obtained is 100% drop.
For the final cut, different lots with floral, fresh and ripe profiles are selected.
Forty percent of the wine is aged in concrete vats on its own fine lees and the other 60% is aged in French oak for 9 months. After mixing, it is kept in a concrete vessel until bottling.
PAIRING AND SERVICE NOTES
Excellent with mushroom risotto, legumes in stews or matured cheeses. We recommend serving it at 16°C.
