An attractive wine with a complex aromatic profile of fresh, ripe fruit, black pepper and mineral notes such as graphite and gunpowder. The oak aging of this Cabernet Franc gives it subtle spicy notes.
Pioneer Cabernet Franc
On the palate, the typical reactive tannins of the region are evident, followed by a long and very elegant finish.
PRODUCTION AND AGING
These grapes are harvested by hand and fermented at 26-27ºC for 10 days, tasting daily. Its production is classic, in small concrete vats, with a 14-day total maceration of its marc.
The vat foot used is a Bayanus strain. and the wine obtained is completely drop, without blending with the wine press.
It underwent 100% malolactic fermentation and was aged 30% in un-oaked concrete vats (to preserve the fresh fruit profile) and 70% in used French oak barrels.
After the mixture is made, it is kept in concrete jars until it is bottled.
PAIRING AND SERVICE NOTES
Excellent to accompany a classic Argentine beef asado with empanadas criollas as a starter. We recommend serving it at 16°C.
