Light red color, typical of the variety. Aromatically, refinement and elegance are evident. Its aromatic richness is dominated by red berries such as currant and raspberry and subtle herbal notes.
The palate has a sharp entry, with tannins that give us the characteristic chalky notes.
Elite Pinot Noir
The oak aging appears in classic form, with descriptors reminiscent of spicy notes. The palate has a soft entry, with silky and friendly tannins that give us the characteristic chalky notes.
PRODUCTION AND AGING
Alcoholic fermentation is carried out at 20°C for 8 days. The movements during this one are punch down, 100% by hand and with daily tasting. Classic production, with a total maceration of 18 days (from vatting to devatting). Vinification was carried out in stainless steel tanks. The vat foot used is a mix of yeasts (Torulaspora, Kluyveromyces and Saccharomyces cerevicie). Malolactic fermentation is 100%. The wine obtained is 100% drop; it is not blended with press.
The wine was then aged for 11 months in 70% un-toasted French oak foudres, 25% ovoid concrete vats and 5% used 600-liter French barrels. The minimum bottle storage time prior to commercialization is 6 months.
PAIRING AND SERVICE NOTES
Excellent with steak eye with rustic potatoes and chocolate mousse.
We recommend serving it at 18ºC.
